Gooey Chocolate Chip Cookie Dough Brownie Bars

Ingredients

  • 200g dark chocolate
  • 150g unsalted butter
  • 250g sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 120g all-purpose flour
  • 50g cocoa powder
  • 1 tsp espresso powder
  • 1/2 tsp salt
  • 150g chocolate chips
  • 100g cookie dough

Instructions

  1. Preheat your oven to 175°C (350°F).
  2. Melt the dark chocolate and butter together in a heatproof bowl.
  3. Stir in the sugar until well combined.
  4. Add the eggs one at a time, mixing well after each.
  5. Mix in the vanilla extract.
  6. Sift together the flour, cocoa powder, espresso powder, and salt, then gradually fold into the wet mixture.
  7. Fold in the chocolate chips.
  8. Pour half of the brownie batter into a greased baking dish.
  9. Spread the cookie dough on top of the brownie layer.
  10. Top with the remaining brownie batter and smooth it out.
  11. Bake for 25-30 minutes, until a toothpick inserted comes out clean.
  12. Cool before slicing and serving.

Notes

Serve warm with a scoop of vanilla ice cream for an extra treat. Store in an airtight container at room temperature for up to 4 days or freeze for longer storage.
