- 180g all-purpose flour

- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 70g unsalted butter, at room temperature
- 2 eggs, at room temperature
- 1 teaspoon vanilla extract
- 250g canned pineapple, drained and chopped
Instructions
- Preheat the oven to 180°C (350°F) and grease a baking dish.
- In a bowl, combine flour, baking powder, baking soda, and salt.
- In another bowl, cream the butter and sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition.
- Mix in the vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fold in the pineapple pieces gently.
- Pour the batter into the prepared baking dish and smooth the top.
- Bake for 30-35 minutes or until a toothpick comes out clean.
- Cool completely in the pan before slicing into bars.
Notes
For a unique twist, feel free to substitute other fruits like cherries or mango.
