Golden Pineapple Bliss Bars

Delicious and moist pineapple bars inspired by the classic upside-down cake, perfect for any occasion.

Ingredients

  • 180g all-purpose flour
  • 150g sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 70g unsalted butter, at room temperature
  • 2 eggs, at room temperature
  • 1 teaspoon vanilla extract
  • 250g canned pineapple, drained and chopped

Instructions

  1. Preheat the oven to 180°C (350°F) and grease a baking dish.
  2. In a bowl, combine flour, baking powder, baking soda, and salt.
  3. In another bowl, cream the butter and sugar until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Mix in the vanilla extract.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  7. Fold in the pineapple pieces gently.
  8. Pour the batter into the prepared baking dish and smooth the top.
  9. Bake for 30-35 minutes or until a toothpick comes out clean.
  10. Cool completely in the pan before slicing into bars.

Notes

For a unique twist, feel free to substitute other fruits like cherries or mango.
